Healthy Raw ANZAC Balls Recipe
If you’re looking to celebrate our ANZACs with a tasty treat without the added guilt then these raw, vegan ANZAC bites are perfect!
2/3 cup steel cut gluten free oats
1/2 cup cashews
1/3 cup sunflower seeds
1/3 cup shredded coconut
1 tsp cinnamon
1 tbsp chia seeds
1/3 cup maple syrup
2 tsp vanilla
1 tbsp coconut oil
Extra oats to roll the balls in (optional)
Place oats, cashews, sunflower seeds, coconut, cinnamon and chia seeds in a food processor (a high speed blender would also work) and blend until they are finely chopped and combined.
Add the maple syrup, vanilla and coconut oil and blend, making sure the mixture easily sticks together. Roll the mixture into small balls, then roll them in the oats if you wish.
Place in the fridge or freezer until they go hard and enjoy!
